create an off trail point
Trying to create a route and it always reverts back to a trail or road.
Is there a selection or setting so I can just have it follow from point to point?

Yes, selecting the straight-line mode (bird icon) while creating a route will let you plot a straight-line from point to point. Check out these article for more information on the various routing modes in Gaia GPS:
