    In my experience, you choose the maximum zoom level when you specify the download area and it brings in that level and all above that level.  Later, if you want a subsection of that area at a higher zoom level, it will bring that level and those between it and your last download, but it doesn't re-load the already present zoom levels.

    If you want multiple topical layers (map types) you can have them selected (visible) when you select the download area and they will all download.  I don't recall how it manages the zoom levels, but I'm pretty sure you don't have the opportunity to set them differently for the different layers.  I usually download with only one map type visible - it reduces the download time and seems to increase the success of download attempts (for me at least).

    When offline you can select different map types and those that you have downloaded will be visible if you want.  It can be a bit confusing if the region is one you've used while on line as there is some caching of imagery going on so some maps may appear available even if you didn't download them due to the image cache.

    WHATEVER you do, put your device in airplane mode and manually verify the maps downloaded correctly, at the requested zoom levels.  And do it a few days before your trip.  I'm new to the app, but so far 50% of my map downloads weren't what I expected and I had to redo them.  Usually, it was user error because I assumed "medium" would be good enough, and it was blurry and useless.

    Great advice here from @snell and @weifos2016. 

    Like @snell said, your map will download the zoom level you select and all levels above it. 

    Also second-ing their response to your second question. All downloaded layers are available while offline, you can swap between them just like you do when the app is online. Only the areas you have downloaded (plus some cached tiles, as snell mentioned) will be visible for each layer while offline.
