Ability to take fast categorized waypoints

I want to map a lot of something fast and have all the points classified into folders or some other way if grouping while I am taking the points. If Gaia can’t do that, do you know what can? Examples of waypoints includes hundreds of a bad weed or rare plants along a trail or road; areas along a trail that need maintenance classified by erosion, trimming, logs down, etc; locations of animal tracks of different species; etc. I want to be able to take these points and put them in a folder while hiking without having to stop. Ideally, I’d like to do it fast enough that I can map things riding shotgun in a car going 55mph. There is a whole lot of awesome data that can be gathered that way if you can take and classify the points fast enough.
