I recommend recording a new track for each day of your hike so that you can view each day's track stats individually. If you also want to view the collective stats, you can file all the tracks to a folder and look at the folder's stats on gaiagps.com:
I can see how capturing health information like calories burned would be helpful. The Gaia GPS Watch app can do something similar. Recording a track in the Watch app records a workout alongside it. Workouts are viewable in the Apple Health app on iOS. You can learn more here:
