I'd like to be able to stand at the base of a hill and draw a line up to its ridge on my device and have Gaia tell me the slope of the hill

  There is no specific tool to measure the slope angle, but the Slope Angle layer will allow you to see the angle at a glance. Here's more information about how to use it and add it to your layers list.
