I have used this to edit and analyze tracks

    http://www.gpstrackeditor.com/download

I did not get any spam or malware after installing.

Just export as a gpx file.

the editor is no longer supported but seems to work ok.

It looks as though the track editor only works on the Windows platform. Anybody know if there's a Mac version?

For editing GPX files on a Mac, I recommend using Adze.

The gpx files are simple ascii files so depending on how geeky you are you could write a script to do what you want, here is  a snippet of what the contents of the file look like,  Note my elevation in this snippet, I was in the bay on the gulf coast.

I suspect what you are wanting to do could be done with python.  Each waypoint has a timestamp so you could just go thru them calculating  speeds between trkpts.
