Gaia Top Menu Bar Distance and Ascent/Descent Selections

Hi, can anyone tell me how the distance and the ascent/descent work in the IOS Gaia GPS top menu bar selections along with the more obvious elevation, speed, etc. selections? Distance from where, and ascent/descent from where? Is there a way to reset (zero) them? I am looking at IOS currently but use android as well. There are a bunch of selections that would seem to need a way to zero out, like max speed and others - what am I missing here? Thanks!
